Cilantro and Lime Corn on the Cob

Ingredients:

  • 8 ears of corn
  • Salt and pepper to taste
  • Garlic Powder
  • Cilantro
  • Lime
  • 8 tbs Oil (olive, vegetable, or butter)
  • tomatoes

 

Instructions:

  • Preheat oven to 400°F.  Line a baking sheet with aluminum foil.
  • Place corn on baking sheet.  Reserve about 1/2 of the oil/butter.  Spread remaining butter on the whole ear of corn.  Sprinkle spices liberally or mix them on a plate and roll the cobs.
  • Bake for 30-45 minutes, until starting to brown.  Turn corn occasionally. Remove from oven and add more ingredients as you like!
