This week's tips
For this week I kept it simple because two weeks ago I did a larger grocery haul. Being the first week in May, it's nice to only use about 33.93 of my $200 monthly budget and I do so by constantly rotating larger and smaller grocery trips.
This week I wanted to use up a lot of the ingredients I've had lying around. This is why I LOVE my recipe catalogue, it allows me to save money by first trying to go through ingredients I already have. As you can see I pretty much had everything I needed for the Greek Chicken so that was the perfect thing to start with. I made it several months ago and had used about half the capers and olives and stored the rest for the next time I felt like making this.
With my smaller grocery trip last week I bought yogurts and apples so I was covered for breakfast as well. For lunch I went with my turkey tacos because I was getting pretty bored of just chicken. I love the taco meat because it's so versatile.
You can eat it as is, put it in a tortilla wrap, or load it onto chips with other veggies and cheese for nachos. It can act as a healthy meal or a quick and easy cheat meal! If I hadn't done a larger trip more recently I also would have doubled the amount I cooked and used 3lb for the week's meals and stored the other 3lbs. in the freezer to use in the next 3 months!
